i enjoy baking.. although i don’t do it nearly often enough. the problem is, if i did it more often, i’d be a couple sizes bigger.. because even though i come from a family of 8, i somehow always end up eating all the stuff i bake. so i usually stick to cooking. but this recipe is pretty cute. we lived in tuscany for a few months and my neighbour gave it to me. its really a forgiving recipe.
400g flour
400g sugar
4 eggs
±125ml milk
±60ml oil
1 pack of baking powder. if your supermarkets don’t package that way, then its round a bout 15mls
pinch of salt
greased baking pan
Preheat oven to 180℃. Place all dry ingredients in a bowl, mix in all liquids (apparently you should first whisk them together.. thats what all the fancy pants say. i don’t usually, i’m all for effortless baking) stir all the ingredients together, until most of the lumps are out.. lets not split hairs..
place the batter into baking pan and cook for 25-30 mins, depending on thickness of your tray.
this particular cake keeps well. for a spongier cake, put less flour in ratio to sugar. for more cup cake tasting cake put a spoonful of condensedmilk or a couple more spoons of sugar.
Serve warm with jam and icing sugar.
